Where we come out The shape-cutting shear of this group, and the most expensive per millimeter of blade.
What it does that the others cannot
Follow a line that is not straight. Discs, radiused corners, shaped patches — work that otherwise means a nibbler, a jigsaw with a metal blade, or a grinder and a lot of dressing.
The trade
A curved blade is a slightly less perfect tool for a long straight cut than a flat one. If straight lines are all you cut, the Wiltec pair above are cheaper and better at exactly that.

The questions welders ask
How does a curved blade cut a curve?
Only a short section of the blade is in contact at any moment, so the workpiece can be swung between strokes and the cut follows the rotation. A long straight blade cannot do that — it engages the whole line at once. It is the same reason tin snips for curves have short, curved jaws.
Why name stainless specifically?
Because it is the demanding case. Stainless is stronger than mild steel and work-hardens as it deforms, so a shear that handles it is built heavier at the pivot and uses harder blade steel. A maker naming stainless is making a claim about the machine; one naming only « metal » is not.

A named steel grade at a published thickness, in a sheet big enough to cut a bracket from — and the only item in this hub that states what the metal actually is.
Best for: Brackets, repair plates and shop fixtures, where the grade and the gauge both have to be known
